Sangiovese is in fact a rich, rough, difficult varietyfrom this area. Accordo wants to convey this in all its noble and aging potential, the result of agricultural, enological and character choices that serve to express its strength and its character, with strongly ties to our food traditionsfor important occasions.
Rich, with an aggressive character, Accordo does not easily fit identifiable categories. It requires the ability to enter with self-confidence into the world of the ancient, multifaceted and complex personality of one of the wines with the strongest ties to the Italian wine tradition.
Ruby red color with rather deep garnet reflections, aromas of amarena cherry, blueberry and plum blendingwith sweet sensations of cocoa and licorice. In the mouth, a slightly acidic freshness supports the energetic but smooth tannins balanced with a good softness.

Soil: Volcanic origin, hilly, at 280 m elevation, southwest exposure.
Grape variety: Sangiovese
Vineyard age: 9 to 15 years
Density: 3500-4000 vines per hectare
Yield: 6000 kg per hectare, after thinning 5000 kg per hectare
Training system: Rammed cordon
VINIFICATION
Harvesting is done in mid-October, when the grapes have reached a perfect balance between the sweetness of the juice and softness of the tannins. Fermentation in cement tanks at 27°C for 8-10 days, followed by contact with the skins for 15-20 days. After racking and malolactic fermentation,it is put in barriques for a period of 8-12 months, softening its roughness, rounding its tannins and reaching its balance. It is then bottled and left to rest for at least 12 months.
PAIRINGS
It goes especially well with hearty dishes, typical of the Umbrian tradition: bean soups, roasted meats, game, cold cuts and aged cheeses.
