TENUTA LE VELETTE EXTRA VIRGIN OLIVE OIL

The centuries-old olive groves stand in different areas of the estate, and consist only of typical Umbrian varieties: Moraiolo, Frantoio, and Leccino.
The olives are pickedby hand and collected in synthetic nets to keep them from being bruised, the first step in obtaining superior quality oil. The same day they are harvested the olives are sent to the mill, where a continuous cycle plant processes them and gives us extra-virgin oil of the highest quality, thanks to the immediacy of the process.
The oil is then placed in stainless steel containers in dark rooms away from sources of heat.
Lastly, it is bottledin containers of different sizes.
CHARACTERISTICS
Name: Tenuta Le Velette Extra Virgin Olive Oil.
Olive varieties: Frantoio: this produces an oil with an intense green to yellow color, very fragrant with hints of Reinetteapples and cut herbs; it is spicy and fruity in the mouth, because it is very rich in polyphenols. About 40% of our olive groves.
Leccino: this produces an oil with a more subtle color, a light, delicate fruitiness and herbaceous nuances. About 40%
Moraiolo: this produces a very spicy oil, with slightly bitter hints of artichoke. About 20 %.
Characteristics of the olive groves: approximately 3500 trees, on medium-height hills, with optimal exposure and planted on volcanic soils.
Elevation: 280 – 330 mt
Production method: Our top quality olives are handpicked and carefully selected, and immediately sent for pressing, in order to prevent the fermentation of the pulp.
The cold pressing exalts the fruity aroma and the characteristic flavor of Umbrian olive oil.
The Extra Virgin Olive Oil thus obtained is bottled without filtering and may naturally produce a small amount of sediment.
Color: a clear, intense green color, with light golden yellow highlights.
