Grechetto is one of the oldest local grape varieties, and it has always been grownin this area. It is the prince among the grapes use to make Orvieto D.O.C. wine.
It is known for producing grapes with a strong polyphenolic structure. The resulting winehas an intense golden yellow color, with spice and vanilla notes, rich and full, with great structure and body, but with a pleasing freshness that ensures its longevity. Likethe grape variety it is made from, Sole Uve does not fear time; instead it benefits from it, maturing and evolving, in a challenge where everyone wins. Sole Uve is the fruit of the curiosity to understand the true potential of one of the area’s most interesting and unusual grape varieties. Soil: Volcanic origin, hilly, at 200 m elevation, southwest exposure.
Grape variety: Grechetto
Vineyard age: 10 to 21 years
Density: 2700-4000 vines per hectare
Yield: 6500 kg per hectare
Training system: Rammed cordon, Guyot
VINIFICATION
Harvesting is done in the last ten days of September, when the grapes are very ripe and rich. Half of the must is fermented for 10-12 days at a controlled temperature in stainless steel. The other half is vinified traditionally in oak barrels, without temperature control, in order to bring out the rustic character of the grape. It then rests on the lees for 3-4 months, becoming smoother and softening the harshness of the tannins. Once the bâtonnagestage has been completed, it matures another 2-3 months in the tank, and then it is bottled in May and marketed after aging in the bottle for at least 6 months.
PAIRINGS
A rustic, decisive, straightforward wine, it goes very well with the traditional dishes of Orvieto, bruschetta, crostini, polenta, prosciutto and salami, as well as risotto and rich and meat-based pastas. A wine that goes well with important dishes, to be savored slowly in order to capture all its sweet, warm nuances.
